This is my favourite healthy fat here in Cuba. Not only have I been enjoying at least 30g of fresh coconut meat daily, I have created some amazing recipes that I am so excited to share with you, using fresh coconut meat.

Not only is coconut meat rich in medium chain triglycerides, it is full of nutrients such as potassium and minerals and is excellent to add to smoothies or a top parfaits.
