Eating Clean When Traveling: Part 6
As all of you probably know by now, breakfast is my absolute favourite meal of the day. As there are not a lot of healthy carb options for me here in Cuba and the fact that I am gluten free, I am always sure to pack lots of healthy carb options for myself.
I have brought with me a huge bag of uncontaminated organic oats as well as flax seeds, coconut oil and maple syrup. With this combination, I have taught the chef here to prepare some mini clean pancakes for me and this is one of my absolute favourite breakfast options here.
Zain´s Mini Tropical Pancakes
1 Cup Uncontaminated Organic Oats
10 Egg Whites
1 Tbsp Flax Seeds
11-2 Tbsp Maple Syrup
1/4 Tsp Extra Virgin Coconut Oil
1. Blend oats, flax seeds and egg whites
2. Grease grill and small circular cake moulds with coconut oil
3. Pour batter into the moulds and cook until golden on both sides
4. Serve warm with syrup and cinnamon and pair with 1 cup fresh tropical fruit, my favourites while I am here are passion fruit, pineapple, guava and mango
